The Thing About Bill: In which Sara realizes that no matter how much things need to change, some paths are impossible to redirect.

And just in case you were wondering about my key lime pie recipe, here you go:

Bill’s favorite Key Lime Pie

  • 4 egg yolks

  • 1 can sweetened condensed milk

  • 1/2 cup lime juice

  • 1 cup heavy cream

Crust:

  • 1 package Pepperidge Farm Ginger Man cookies, processed into crumbs

  • 1/4 cup melted butter

  • 2 tbsp sugar

Directions:

  1. Preheat oven to 350.

  2. Combine cookie crumbs (you can use any kind of cookie if you like, but he liked ginger or graham crackers best), butter, and sugar. Press into the bottom and up the sides of a 9 inch pie pan.

  3. Put egg yolks into a blender or food processor and blend until light yellow.

  4. Add sweetened condensed milk and blend. Scrape down sides and reblend if necessary.

  5. Add lime juice and blend until thoroughly combined.

  6. In a bowl, whip the heavy cream until soft peaks form. Fold in the egg yolk, condensed milk, and lime juice combination and pour into prepared crust.

  7. Bake at 350 for 12-15 minutes. Allow to cool to room temperature on countertop and then refrigerate until firm.

  8. Serve plain or with fresh raspberries and whipped cream.

*If you need it to chill quickly, allow to cool until just warm to the touch and place the bottom of the pie pan in an ice bath until firm.

**I have made the crust with graham crackers, sugar cookies, shortbread, saltines, and crunchy granola bars. Use whatever suits your fancy. Add more sugar if needed.
